Grey sits between black and white for a reason: it shows the shape of a part without hiding detail in shadow or washing it out under a lamp. This is the PLA+ version, so the prototypes you print in it can be tested and handled rather than only looked at. Engineering students use it for assignment models that get passed to a marker, and small workshops use it for fixtures that live permanently on the bench. It also takes filler and sanding well when a part is heading for a painted finish, since the base colour does not fight the primer.
